Steph shares 2 recipes from their cookbooks.



Today Steph takes control of my blog, sharing with us 2 amazing recipes from their cookbooks.
Over to you Steph.



Well Dan was renowned for his sausages on My Kitchen Rules.
We created 3 different ones during the show & the judges only enjoyed one - it was absolutely heart breaking as we were so passionate about making our own. 


There was talk during the show of a sausage shop, but after some research it was not the right idea & path for us to go down.
Now have our own restaurant 'EAT at Dan & Stephs in Hervey Bay' we are still are very passionate about our sausages. We create our own flavours & cook them for you to enjoy or you can actually take a fresh pack home with you.
This recipe is ideal for the entire family - definitely a WINTER WARMER, comforting & delicious

Sausage & Lentil Simmer
Serves 4
Ingredients
1 tbs of olive oil
150g of pancetta or bacon, diced
8-10 good quality pork sausages
2 onions, chopped
1 large carrot, diced
4 garlic cloves, diced/minced
3 sprigs of fresh rosemary
400g of green puy lentils
900ml of salt reduce chicken stock
1 tbs of vinegar
1 x 440g tinned tomatoes
¼ bunch of parsley, roughly chopped
Method:
Heat oil in a large casserole or very large pot.
Add the pancetta & sausages & allow to cook & sizzle for 10mins, stirring & turning the
sausages occasionally until nice browned & sticky – take out the sausages.
Add a little more olive oil & add the onions, carrots & garlic to the pancetta – cook for 4mins until all softened.
Return the sausages to the pan.
Add the rosemary, lentils, stock, vinegar, tomatoes – stir.
Season with a good pinch of salt & pepper.
Bring to the boil & simmer rapidly for 5mins, then lower heat & simmer slowly for 50mins – be sure to stir every now & then – check the lentils to make sure they are soft to squeeze but still have a little bite to them.
Serve with fresh parsley sprinkled over the top.

Super easy & they will just love them.

We use yummy ingredients that you will no doubt find already in your pantry
If your kiddies are anything like our daughter Emmy they will love mixing all the ingredients together.

Granola bar
4 cups of oats
1 cups of caster sugar
1 tsp salt
1 tsp ground cinnamon
6 cups of dried fruit – cranberries, dates, sultanas
2/3 cup of peanut butter
1 cup coconut
2 tsp vanilla paste
240g melted butter
1 cup of honey
2 tbs of water
Method
Preheat oven to 180 degrees
Oil & line tray with baking paper.
Combine all dry ingredients in a bowl.
Combine water, vanilla, butter, peanut butter & honey in a saucepan & over high to medium heat, melt all ingredients.
Add the wet to the dry.
Pour into tray & press firmly.
Bake bars for 30-35mins until browned edges.
Remove from the oven, allow to cool completely & cut.
