Loved Joanne's Christmas story. This author makes all her stories so real and so engaging, I can visualise everything as if I'm actually there. Her short stories help a boring lunch break so enjoyable. It may be a Christmas story but I will read this over and over again. More please.

Jo’s Calamari and King Prawn Stew – Serves 2



MR R and I love this stew, slow cooked veggies in a white wine and tomato sauce, served with brown crusty bread makes a hearty supper dish.

YOU WILL NEED:

4 Tbsp olive oil        500g sliced tomatoes                  500ml/1/2 litre of fish or veg stock          75ml/1/3 cup white wine       200g tomato puree         1tsp paprika          ½ tsp dried crushed chillies             1 onion chopped      2 cloves garlic finely chopped       450g potatoes cut into chunks          1 red , 1 yellow, 1 green pepper de-seeded and chopped         1-2 stalks of chopped celery          1 med- large carrot chopped        1 sprig of fresh rosemary or 1 tsp of dried        1 bay leaf   250g calamari     250g king prawns          salt and pepper    

 

  1. Heat the oil over a high heat in a frying pan until the oil is nearly smoking. Add the tomatoes and cook for 2 mins stirring frequently. Turn the heat down low and cook gently for 20 mins, or until very soft so you can mash them down with a potato masher.
2. Add the stock, wine, tomato puree, paprika and dried chillies and simmer for about 2 mins turn off the heat.

3. Chop veg and add to pot of slow cooker.
4. Pour the tomato and wine sauce, over the veggies, and give a quick stir so the sauce mixes in.
5. Add rosemary and bay leaf, cover with the lid and cook on high for 2 – 2 ½ hours, or until the potatoes and carrots are just tender. Season with salt and pepper.
6. Add the calamari and prawns, mixing them into the vegetables and cook for another 20 mins. Serve on warm plates or bowls with brown crusty bread.

Onion Jam- Christmas would not be Christmas without a good cheese board and a good cheese board would not be the same without Onion Jam

 
Just made my first batch of onion jam for Christmas.
Slow cooked, caramelized onions will keep for several days in a sealed container in the fridge, but it is so yummy, I can guarantee it will only last as long as it is on the table.
 
This recipe should serve 6 but in our house serves 4 at a push.
 
YOU WILL NEED
2 tbsp. olive oil          1 tbsp. butter      500g thinly sliced onions       3-5 sprigs of fresh thyme, or 1 tsp dried        1 bay leaf      2tbsp brown sugar      2 tbsp. balsamic vinegar plus a little extra
120ml/ 1/2 cup red wine      50g ready to eat prunes or I sometimes use 1/2- 3/4 cup black grapes
salt and fresh black pepper
 
  1. Put the onions and butter in the cooking pot of your slow cooker and heat for about 15 mins, until the butter has melted. Add the onions and stir.
  2. Cover the pot with the lid and a folded tea towel. Cook on high for 5 hours, stirring the onions several time. (Sometimes I find them cooking too quickly and starting to burn so I turn the slow cooker down to low)
  3. Season well with salt and pepper, add bay leaf, sugar, vinegar and red wine. Gently stir and then add prunes or grapes.
  4. Re – cover and cook for 1 ½ - 2 hrs, or till the mixture is thick and sticky. Adjust the seasoning adding more sugar and/or vinegar to taste. When cool store in an airtight container or jar and keep in the fridge.
Once you have tasted this you will never eat cheese again without it. Also great with Pate or as an
accompaniment  with a meat platter, or on the side of a ploughman's.

Bowled over with the Himalaya Restaurant & Bar – Sinquerim Candolim Goa.



You probably have not heard of the Himalaya Restaurant next to Taj Village in Sinquerim, well I am about to sing their praises for this family run restaurant.

Over the many years of eating in Goa, I have never heard MR R say, “well, I can honestly say I have never eaten a meal out in Goa that have the flavours, quality and quantity as good as yours.”

I totally agree with him. I can say hand on heart these people really care about food; they are not a family out to make a quick buck, each mouthful of food I took I could  feel that there was love and pride taken in preparing every dish.  

These people know about good restaurant skills.  The menu is not massive, offering pages and pages of dishes, that to me as an ex restaurant manager is practically impossible to give quality let alone constancy.  There was no smoke screen to make dishes sounds appetising, they really were what they said, and much more.

The staff in their smart uniforms were polite, well spoken and professional, but most of all friendly. They were able to articulate well every question we asked about the menu.

With an inside no-smoking area, and outside garden area the ambience of the place was serene, no busy traffic, just soft background music and the gentle murmur of customers enjoying a great night out.

Our Food

Great MO MO’s 130 Rupees

We opted for the veg Mo Mo’s.  Flavoured with fresh herbs and spices with cheese served with clear soup.

 
 
Little dumplings of flour and water that tasted like little parcels of delight, that should be renamed Mo Mo Moreish.  Drop one into  the clear soup that was so full of flavour, it remained MR R and I of  our childhood drinking big mugs of Bovril on cold winter days, you have to keep going back for more.
Phing Sha Rice 150 Rupees
Steamed rice served with savoury mixed veg made of glass noodle potato, cauliflower, spinach and black mushrooms.
The combination of vegetables and spices mixed with the plain rice sent my mouth on a roller coaster of flavours.
Che-tse 130 Rupees
Flat homemade pasta with tomato tofu mushroom green pea sauce.
Normally I steel clear of pasta dishes when not in a proper Italian restaurant.  Why? Because it is cheap to buy, you get a plate full of pasta and have to search for the sauce, and always overcharged.
However, I set my principles aside when I saw it was homemade, and OMG did I make the right choice. It was buttery, light and fluffy once again, the flavours exploded in my mouth, it was almost, no… it was sexy.
Verdict
 The combination of flavours, the quality along with ambiance, I have to say this has to be the best restaurant I have been in this year.
No question if I will be back, MR R and I are already planning our next visit.
In addition, to top off my evening I had a perfect Irish coffee.
I give this wonderful little restaurant 5/5 Red Chillies.

Yet another good read from the talented writer Joanne Rawson. As always, she manages to keep her stories engaging and entertaining from start to finish, as all of her other stories. A perfect but quirky holiday romance that wraps the reader in the warmth of love and holiday magic, and leaving you wanting a Christmas romance of your own. This story you don’t want to miss.
