What could be more homecoming after a Sunday Morning walk down Candolim Beach, but the spicy smell of my Beef Madras.



Jo’s Beef Madras 

SERVES 2
 
1-2 Red chillies chopped (Remember the more seeds you add the hotter the curry)
2tsp Ground coriander     2 tsp ground turmeric      1 tsp mustard seed (I mix red and black together in a tub, but you can just use black.)
¼ tsp pepper      3 packets of coconut milk powder      300ml warm water      4 tbsp olive oil
2 onions roughly chopped      3 large garlic cloves roughly chopped      ½ Kilo soft beef (stewing steak)
1 tsp veg stock powder      1 tsp lemon juice     salt


Mix the coconut milk powder in the warm water.
 


Put the ground spices, chillies, ginger and pepper into a grinder with a little of the coconut milk and grind to a paste.


Heat the oil and fry the onions and garlic until golden brown. Add the spice paste and cook for 2 mins. 

Add the meat, fry for another 2 mins, and then add the rest of the coconut milk, lemon juice and salt.
EITHER: Cover and cook on the oven top for 1 ½ - 2 hrs I prefer to cook it slowly in a slow cooker on high for 4 hours or low for 6-8.
