Jo’s Pumpkin Potato and Lentil soup with Balsamic Onions



This soup is so easy to make.
For the soup, you will need:
1 onion diced          250g potato diced          250g Pumpkin diced          1 leek sliced
½ cup of lentils, either red or green          2tbsp butter          1 clove garlic crushed          1tsp ground coriander     4 cups vegetable stock          sea salt & freshly ground pepper 

For the Balsamic Onions, you will need:
2 red onions sliced          1 tsp butter          4tbsp Balsamic Vinegar           1/2 tsp sugar


Heat the butter in a large saucepan and sauté the onions until translucent. Add the garlic and sauté for a few minutes, and then add the coriander, and the vegetables sauté for 5 mins.



Add the stock and the lentils cover and simmer for about 30 minutes or until the veg are soft.
Now make the balsamic onions.


Heat the butter in frying pan and sauté the onions until soft.


Add the balsamic vinegar and sugar and simmer until reduced.
Just before serving, I mash the vegetables down just a little with a potato masher, to thicken the soup. Ladle into warm dishes and top with the onions.
