Jo’s Baked Bassa – Serves 2

1 fillet of Bassa         1 bunch of fresh spinach – washed and torn       tomatoes sliced      
1 onion sliced       green olives     garlic sliced       fresh basil leaves      olive oil      lemon juice        freshly ground pepper

  1. Drizzle a little olive oil on the bottom of a baking dish. Layer the bottom with the spinach
  2. First layer the top with tomatoes, then onion, olives, garlic and finally basil leaves
  3. Drizzle with a very small amount of olive oil, lemon juice, and a good grinding of ground pepper.
 
    4. Cut the fillet into four, place on top of the tomatoes etc., place one slice of tomato on each fillet, a little garlic and two basil leaves. Drizzle with a little more olive oil and lemon juice. Finish with a good grinding of pepper.




5.Cover with tin foil and bake in a med oven for 20 mins 
 





I served this with a lettuce, cucumber, carrot and grape salad garnish and roasted veg. 

With a quick costing, the whole meal cost no more than £3.00 to make in Goa for 2
